Ingredients (serves 4)
- 1 kg (2.2 lb) pumpkin or butternut squash, peeled and cubed
- 1 large carrot, peeled and chopped
- 1 medium onion, chopped
- 2 cloves of garlic
- 1 teaspoon fresh grated ginger
- 1 tablespoon olive oil
- 4 cups vegetable broth (homemade or low-sodium)
- ½ cup coconut milk (optional, for extra creaminess)
- Sea salt and pepper, to taste
- Toasted pumpkin seeds, for garnish
Directions
- Sauté the aromatics: in a large pot, heat the olive oil over medium heat. Add the onion, garlic, and ginger, and sauté for 2–3 minutes until fragrant.
- Add the vegetables: stir in the pumpkin and carrot. Cook for a few minutes, letting the flavors blend together.
- Simmer and blend: pour in the vegetable broth and bring to a boil. Reduce the heat, cover, and simmer for 20 minutes, or until the vegetables are very soft. Carefully blend the mixture until smooth and creamy.
- the finishing touch: return the soup to the pot, stir in the coconut milk, and season with salt and pepper. Simmer for 5 more minutes over low heat.
- Serve and enjoy: serve warm and top with toasted pumpkin seeds, a drizzle of olive oil, or fresh herbs.
