Beef salpicón is a salad made with shredded beef, crunchy vegetables, and a citrus-based dressing. The best part? You can enjoy it cold, as a main dish or a refreshing side. It’s an excellent option if you’re looking to eat well without overcomplicating things.
Ingredients (4 servings):
- 500 g cooked, shredded beef (flank steak or brisket work well)
- 1/2 red onion, thinly sliced
- 1/2 cup diced tomato
- 1/2 cup diced cucumber
- 1/2 cup thinly sliced radishes
- 1/2 cup finely chopped romaine lettuce
- 1/4 cup chopped fresh cilantro
- Juice of 3 limes
- 2 tablespoons apple cider vinegar
- 1–2 tablespoons extra virgin olive oil
- Salt and pepper to taste
(Optional) Diced avocado for serving
Instructions:
- In a large bowl, mix the shredded beef with all the vegetables.
- In a small container, whisk together the lime juice, vinegar, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Chill for at least 30 minutes so the flavors meld together.
- Serve cold with baked corn tostadas or over a bed of leafy greens.
